Hasip
Hasip is a dish prepared by mixing minced meat, liver, and rice with the guts of slaughtered sheep or cattle, boiling in a pot or steaming in a kettle. This traditional dish, which is prepared for weddings, holiday table, dear guests, originated in the distant past and is preserved in the kitchens of all cities and villages without forgetting. "Dimlama Hasip" prepared by special method, "egg hasip" by putting cooked rice with a well-boiled egg into the sheepʻs intestines. "Rice Hasip" cooked from a mixture of boiled rice and black liver are still favorite dishes.
